This winter vegetable is a member of the Brassica family which also includes cabbage, broccoli, collard greens and kale. These buds are packed with nutrition. They are naturally low in fat and sodium, and are high in vitamin A, C (3 times that of an orange) and D, folic acid and fiber. Relative to other vegetables, they are high in protein and are cholesterol free. Brussels sprouts contain many flavinoid anti-oxidants that protect against cancer including Zeaxanthin which protects against the risk of age-related macular degeneration.
How to cook: Wash and remove outside leaves. Slice in 1/2. Toss with a small amount of olive oil and lemon juice. Place flat side down on a baking sheet and oven roast at 350 degrees for approximately 30 minutes or until tender and slightly brown and crispy. Season with salt and pepper to taste. Enjoy!
